Bad Listeria

We have all been reading about recalls involving listeria.  There are hundreds of courses, seminars, books etc. explaining how to detect listeria in your plant and how to eliminate it.  Science has made great strides in these developments over the years.

 

Research and find a course or webinar that fits your needs.  If you need to know what courses you need to comply with the law, we will inform you on that.

Preventive Controls

We just returned from the Food Safety Summit in Chicago.  Many speakers spoke on Preventive Controls.

Under Section 103 of FSMA, you must have preventive controls.  Examples are:  sanitation of food contact surfaces, ALL personnel must have training in employee hygiene, environmental monitoring, food allergen control and some others.

But the key point here is that an individual in EACH LOCATION must be in charge of this and hold a certificate that they have been trained.  There are many courses out there.
