Qualified Individual

FSMA mandates that your plant has a “qualified individual” to oversee your “food safety programs”.  We want to emphasize programs, meaning more than one.  This includes your food safety plan, hazard analysis and preventive controls.

 

Your individual must have experience in the food safety industry along with documented food safety education AND food safety certification.

 

In addition to the above, the FDA inspectors will also want to see records whereby management is reviewing this entire process.

From HACCP To HARPC

Following the passage of FSMA, FDA instituted HARPC (Hazard Analysis and Risk Based Preventive Controls).

 

Your food safety plan must identify any and all reasonably and foreseeable food safety hazards, and include risk based preventive controls for them.  You must now minimize risk from the very beginning of your process to the very end.

Criminal Prosecution

We the believe that the federal government, because of FSMA, will be focused on criminal prosecutions of executives, if a foodborne illness is tied to a specific facility.  Their past history, in a lot of cases, they went after the corporation.

 

Please know FSMA, have a working food defense plan, a working HACCP plan, monitor your suppliers, do environmental testing, etc.
